I truly don't know much about plushies, but I'll give it a shot. Also, I believe in reasonable reviews, so you won't be getting all five stars unlike some people.
Now, the body shape. You did a good job of staying true to your own style as well as being accurate, and I can't critique you if you intended for it to be different. If you wanted it more show accurate, I think the head, not including muzzle, could be a little more round. The body could also be a little bigger, and the back leg(s) to have a bit more shape to them. If you look carefully on official show style, the back legs are vastly different in the way that the connect to the body compared to the front legs. The horn could be moved a little forward as well.The mane and the tail look great though!
I personally would have gone with the light blue mane to add more contrast, but then again I'm a stickler for accuracy. It's impressive that the cutie mark and eyes seem to be the right position and size!
Overall, It has a bit too much freedom in straying from show style, but if that's what you intended, then it couldn't be better. I really do think this is an amazing plush, and looks totally cuddle-worthy. You have a serious amount of potential in you, Rainbow-Rocket, and I look forward to seeing you improve as I know you will.

what kind of shape do you recommend to make a spherical shape? i had a project in FACs class and i tried to make a 3d bunny but i couldnt find a shape to make it's head.

Trial and error, testing different patterns and shapes until you find the one that works best for you. Start by sketching, then leave a little space when cutting out the pattern. You will definitely do it several times, because that's all part of the pattern fun. xD

Cuddle is just as expensive and soft, just slightly less soft then minky. It also stretches differently.
