I seem to recall at least one other time in the series when Mr. Weasley was under some sort of spell that she was trying to fix. Besides, the woman has a huge family, it's not her fault she has to be a housewife. She's still amazing, and I'd say the "Not my daughter, you bitch!!" moment makes up for it anyway.

It's not exactly hard to cast a spell when you're a witch, regardless of what you primarily use your magic for. And besides, when you're saving your child's life, you don't think-you just act on impulse. Killing curse = boom, bitch be dead.

Rowling never bothered to describe exactly how dueling works, but obviously there is more to it than that, or all duels would be over very quickly. Reflexes must also play a role — I seem to remember that Bellatrix had been dueling three people at once before Molly barged in, so she must have been like a Jedi or something. It doesn't add up that she can fend off three opponents at once, then lose to a housewife.

Ummm, first of all, they weren't dueling. Dueling is a sport and has strict regulations. The Battle of Hogwarts was a MOTHERFUCKING WAR.
All's fair. Second, it doesn't matter how much experience you've got fighting. Men and women are dying right now in Iraq who have been soldiers for decades. New recruits, on the other hand, whom had never held a gun in their life before undergoing basic training, have been known to survive.
Anyone can drop their guard for a second, especially when focusing on a small target, like a 15 year old ginger. Molly took advantage of a sneak-attack and won. Simple as that.

It's a wonder she survived long enough to land that lucky shot (the book makes it sound like they dueled for a while). If it were revealed that she had been practicing in her spare time, I'd feel some respect for her. As it is, it just feels like another cheat on Rowling's part.

Now, if 17-year-old Jeanne D'Arc can lead the French [Muggle] army in it's ONLY recorded victory in the history of France, and 12-year-old Arthur Pendragon can pull a full sized sword out of the Rock of Ages, then you'd THINK a grown witch whom has lived through the pre-Potter Age of the Dark Arts and has Maternal Enchantment on her side can take down a single (likely battle-exhausted) Death Eater. Just maybe.
