I will answer your question in some rivalities.

Mario vs Sonic: Depends, Sonic is faster and blocks attacks better, Mario is stronger, jumps higher and can be very agile.
Luigi vs Tails: Luigi (Tails is faster but Luigi has a great speed, too, and many own abilities like Luigi Super Jump, Thunder and electric attacks, Negative Zone, Green Misile, Vanish Luigi, etc..)
Peach vs Amy: Peach (Effective pshysical and magical abilities)
Yoshi vs Knuckles: Mmm... I don't know (Knuckles is stronger but Yoshi jumps higher and can could be faster)
Daisy vs Blaze: Blaze (Fire attacks, perhaps Daisy's plants would burn)
Geno vs Emerl: Geno (Speciallity in magic abilities)
Donkey Kong vs Jet: Donkey Kong (Very strong, more agile and can turn invincible)
Birdo vs Vector: Vector (Birdo can only shoot eggs and some fire, is mostly lame, Vector is stronger and faster)
Bowser vs Eggman: (Eggman can't fight without a robot)
Baby Bowser vs Gamma: Draw (Gamma is a robot but Baby Bowser can use the brush turning himself in Shadow Mario, both are some easy to beat)

Wario vs Shadow: Mmm... very hard, both have many own effective abilities, so Draw.
Waluigi vs Silver: Silver's only advantage is the telekinesis, both can levitate and aren't very fast, although Waluigi is extremly fast descending to the ground, has very strong legs (He beat Bowser with a kick)
Mona vs Rouge: Rouge (Mona can't fight)
