Description This 'cake' is actually made up of 12 cupcakes. The cupcakes are arranged into a desired shape and then frosted together like a whole cake. This is one of my many original designs. The monkey!

Made with buttercream frosting with #4 tip for outlines.

Lovely! I truly wonder how you get the icing smooth on all those cupcakes...like what about the spaces in between? lol

Well, the spaces in between get some frosting too... buttercream works well in making everything look smooth. Plus it helps that the cupcakes are kinda flat to begin with!

I love the CupCake cakes! I can get really creative with them! For some reason they don't sell as well as the character cakes do though...

Hmm...I know the main reason why they don't sell very well at my store is that the customers say they're too messy to work with eh, to each his own I guess! I'll admit that when they first introduced them to us I was like 'enh, too much work!' But I don't quite feel that way anymore now that I've done a few...They are still a challenge sometimes though!

They are a challenge sometimes! When I work on them the time just seems to fly by though, so that's a good thing! It's interesting because will walk by the case and comment on them all the time, but they always seem to pass them by.... poor lonely CupCakes!

I have these sparkler type decorations that are called Mylar Spray Picks...They're so cool looking!!!! *squee*

Most of my business comes from Halloween and Christmas...little bit at Easter and Valentine's but not as much as the other two...

Trying to keep with the sold cakes is really tough! I've had it to where it's taken me like, 2 weeks, just to catch up with back stock! Bear in mind, I decorate (like full 8-shift's worth of decorating) only two days out of the week... The other two days, I'm baking (and decoarting if there's time), and closing one of the days (also decorating if time permits)...

Ugh! I've been working 40 hours on cakes every week recently... Usually there is 64 hours devoted to cakes each week but now there is only 40 (just me and a girl I'm training...) We are SO behind because the guy that usually mixes fractured his arm and was out for 2 months so everyone had to shift over and do each other's jobs... but no one else can do cakes!! *sigh*
Sorry for the rant... It will be a while before I can get things straigtened out... especially after Memorial Day weekend! I'm so glad you're here to talk to! You understand!!

So you actually make your cakes from scratch? OMG! YOU'RE A SCRATCH BAKERY?! I wasn't sure if those still exist...I came from a scratch bakery (Pavilions) before moving to Albertsons. I've seen what a chore mixing can be...And cleaning those mixing bowls?! OY! We had an industrial dish washer and trying to pick those up and turn them upside down, not fun!

No need to aplogize! I went on a rant myself so it's cool, ya know? I'm glad I can provide some mutual comfort! Nice to know someone else in the business who can relate to these situations!

Well, the rolls are mixed and put through the machines. It is nice to see that the rolls are made fresh everday, but hearing the machine go all day is annoying... Everything else comes in frozen though... even the doughnuts now! Except we make brownies and angel food cakes too...
Do you have to mix your own buttercream frosting? I figured you probably did, but I just had to ask... cause I had to do that today and try to teach someone else how to do it...

We used to have to mix our buttercream AND whip toppings but Brill and Rich's were so kind as to start putting already mixed icings in buckets for ready-to-use purposes...SO MUCH EASIER!!! Mixing the buttercream was the worst! I had to put cellophane around the top of the mixing bowl so the contents wouldn't spill out...
Our rolls, doughnuts, bagels and bread dough does come in frozen and we bake that, but about 80% of our product comes in frozen and we thaw it, price it, put it out to sell...it's already cooked/baked, no fuss no muss!

huh... well I still have to mix the buttercream and Rich's satin cream... Go you for not having to do that!! Saves so much time.... *sigh* Everyone likes to ask me when I'm making buttercream because they like to laugh at me when I'm covered in frosting... well, more covered than I usually am anyway!

I guess most bakerys now get most of their stuff in frozen... at least that's what I've heard. Saves a lot of time... and it's interesting to see the costumer's reaction when they find out that you don't make everything by hand! Haha!

Yup! I love how customers ask if I'll BAKE the cake that day! LOL! Then I explain to them that we don't actually bake the cake, we just decorate it!
...yeah, like I could actually BAKE perfectly rounded and leveled cakes every single time!

Some of the Vons that I've been to are still scratch bakeries because I've seen the BIG mixing machine sitting in the department. Not too sure about Ralph's, but I'm pretty sure that pretty much ALL Albertsons are not scratch bakeries...

I would love to bake a perfectly leveled cake...
I have a thing for big mixing machines... I think they look so cool... I'm so nerdy that when I was watching Food Network and saw a bakery that had the same mixer we did all got all exicted and made my boyfriend watch it too...

I still have the table-top, industrial (and I say "industrial" 'cause there's no way this thing'll fit in a home kitchen!) mixer we used to use for the icing sitting my decorating table, unplugged, and collecting dust... ah well! It's a cute mixer though!

Whenever I watch Food Network for the Pastry Contests/Challenges, I get all and envious! Some of those entries are insane!!
