Did this last year
A Rubik's Cube since it was part of the logo of our Expo and I also did almost 100 sunflower cupcakes with an oreo acting as the center

Put a bit of yellow colored frosting on the cupcake.
Split an oreo cookie and put half of it on the cupcake.
put frosting in the shape of petals on the side of the cupcake.
Do two levels of frosting and it will look like a sunflower
