So, the Daiking is a big robotic dragon with a gundam-ish robot riding on the back...oh hang on, is he just a torso attached to the dragon?! I don't understand.

A Minotaur is a big bi-pedal bull with the arms and torso of a man.
You're getting it mixed up with a centaur: top half of a man coming out of a horse's body from where its head usually is.
