You are so good at what you do.
Not only do you cook your foods, you display them in perfect form and photograph them very professionally. I would never try crisps of beetroot and smoked eel on a menu, but you make it visually appealing, and I think that's something. I just wanted to share my feelings.

Smoked eel... Mmm. I grew up with jellied eel, though , which in my experience is really, really disgusting. You make everything look delicious and fresh!
