I'm not up to date with Marvel, but last time I checked Diana was the most likely winner of this battle...
But, if we go with movies. Captain Marvel was hyped to be Thanos-slayer, so she has a pretty solid chance to win in this scenario. If we're talking about quality, a decen and compelling character beats anything woke

Could probably do with waiting until MCU Captain Marvel actually has feats, but... DCEU Wonder Woman is a pretty safe bet regardless. Quite a bit faster then the norm for the MCU, and with a magic sword capable of hurting DCEU Doomsday. Like with most one on one Vs against the MCU, Wonder Woman is likely to simply have that sword inside of the other guy fast then they can react to her.
Comics now, Comic Wonder Woman is simply on a whole different level then Captain Marvel.

In all fairness, when I create these ideas, I'm not focussing on just one particular version of a character, I'm just thinking about just the character in general, I just use pictures of those versions because they're easier for me to work with.

Sure... But as I said, Comic Wonder Woman is just out of Comic Captain Marvel’s weight class.
Maybe if you used EMH Ms. Marvel Vs DCAU Wonder Woman she might be able to pull out a win, but... Not sure if there has even been an animated “Captain” Marvel version of her that could beat DCAU Wonder Woman.
EMH simply licks out thanks to being a lot stronger of a setting then your typical Marvel or DC animated universe.

That generally doesn’t work due to the varying stats between someone like mainstream comics Wonder Woman incarnations, the Godly Amps those versions of Wonder Woman (Ex: Witchmarked, Godwave, Goddess Of Truth, Dinnana), and the adaptational versions. Which have different feats and scaling

What I'm saying is that I don't bother myself with particular variations of that character, as long as it's the character themselves I'm trying to present, that's all that matters. I just use those pictures because it was easy for me to work, and you can just look at those pictures and say, "That's Captain Marvel, that's Wonder Woman." That's it.

We're talking a Marvel B/C list hero Vs one of DC's decades old main three, that has had dozens of god forms over the years.

Pretty much this. Though, it is worth noting that Feige has allegedly said that Carol is the most powerful MCU hero to date, which, scaling to the likes of End of Ragnarok/IW Thor, Hulk, Doctor Strange with Time Stone, and Nanite Iron Man, should put her in WW's range. Some of those characters contended with Thanos with multiple Infinity Stones, so a being more powerful then them should be able to keep up with Diana. She's fast, but honestly, Iron Man has super speed too, and enough MCU characters scale to him that Diana's super speed shouldn't let her blitz literally anyone in the MCU.
