My current theory is that the rock farm doesn't actually exist. Pinkie Pie actually grew up in Ponyville, possibly being raised by the Cakes. Then one day, she decided that she had grown up on a rock farm. And Pinkie is not limited by silly things like the fourth wall or causality. So the past was retroactively changed, and Pinkie had grown up on a rock farm.

I suppose that the use of the rock farm in her story also helps send the message of low income and depression. That or it could be her way of describing an infertile farm.

I don't think it was truly low income or depression. I am under the opinion that poverty doesn't really exist in Equestria. Celestia has a nice little welfare state thing going on. I mean, it seems a lot of ponies in Ponyville have special talents related to growing flowers and other similar things, and I don't think that the entire town economy can thrive on nothing but growing flowers. You do have some ponies that actually do generate wealth (Applejack and Rarity, for example), but I feel like there's also a lot of wealth coming from Canterlot supporting the town. How else could the afford to rebuild after the town gets destroyed every couple episodes?

Watch the Cutie Mark Chronicles Episode (Episode 23, I think?). It's got backstories for all the Mane six. Pinkie Pie's is one of the funniest parts of the whole show, in my opinion.
And that's how Equestria was made.

Perhaps because they're so unfunny? When you expect something happy and fun, like Charlie Brown getting Halloween candy, or hearing how the crazy party pony Pinkie Pie grew up, then instead you get something bland and pointless like a rock, they seem funny?
