Just because he was actually chuckling, it doesn't mean that this wasn't triggered by a real emotion... Like, I believe he found it very interesting, seeing the different sides of Ciel (and being the only one to see them), as well as the fact that while Ciel struggles to stand strong, at the end of the day, he actually seeks comfort from him, his demon...
He may appear to be somewhat malicious in this scene, but it is borne from genuine fascination with Ciel - one might almost mistake it for enchantment.
(Or at least it is in the anime... I'm not so sure about the manga ^^")
