That is really cool. My son says that's compression waves coming off the wings that turns the air white. I have no idea what that means, though.

The water vapor is formed when the wings are loaded up (high 'G' turns) under humid conditions. A pressure differential occurs that causes the rapid compression then decompression of the air causing the trails.

Nice Capture, Yes it water vapor. I'm told it happens when they are flying just below the speed of sound
