You could publish it yourself. All you need is a printer, and to staple it together. Put a nice, color carstock cover on the front and piece of cardstock on the back and set a price. It's fairly cheap to produce and a $5 to $7 price rance per copy will more than cover the cost of the paper and ink.
If you wait for a publishing company to come along, it will take quite a while, and they will take a big chunk of your profit. This way, you only produce exactly what the customer wants and you don't have a zillion extra books lying around because you did not sell them yet.
I know a woman on deviantart who sells excellent tutorials on drawing -- she makes and prints them herself and mails them out. I have never used a tutorial on drawing because they were all idiotic commercial things for people who really cannot draw.
But hers was a practical, proportional, detailed guide of how to achieve success in drawing human anatomy, animals, birds of various species including wing feathers. It also included the subtle facial and body structure and hair differences between various Asiatic, Caucasian, and African races. It was a truly detailed study, well thought out and well executed.
So, for you to make a coloring book and have people pay you directly via paypal -- it's a no brainer. You can already start advertising on your deviant art area, and show thumbnail examples of part of the book, and tell people the coloring book is for sale. Then poof! You've got a market.

There is also using [link] Lulu.com, which has the best print on demand contract I've seen from any of them. I think they do some large formats and you definitely have creative control on your contents. It's less work than producing the copies by yourself, and success is mostly being able to publicize it.

They have a really good contract. Also they've got a huge community too and a lot of people do collaborative works by way of Creative Commons -- the contract is set up like a menu, pick and choose your clauses. And you pay base cost for the book, it's up to you how much to mark it up, not like iUniverse.com where if I buy it I only get a 30% author discount rather than just paying at-cost for wholesale.
