It's done with a sharpened eraser or in case of mixed media one can even use poster colors to add up those white hairs.

what do you use the brushes for? and how?

Ok, I'm using a plain papers, in place of special smooth drawing papers so that helps me to get a textures in the right places. When i don't need to have that 'paper/skin' texture - I'm using brushes, to blur the pencil.
