(For the name, I tried to find a word associated with water with a vowel at the end because all the words before Knight have a vowel at the end. Keep in mind I'm not the best at profiles.)

PERSONALITY:
Before she arrogant, she was actually quite a pleasant fellow. As years went by, she went up through the ranks through hard work and determination. She was confident around underlings but nervous about those above her. She was quite impressionable and a bit gullible too though...

Before the Dark Matter started to corrupt her, she was openly vain and arrogant, for she let her power and popularity get to her head. Behind the Queen's back (who was unaware), she would sometimes threaten her 'underlings'. She soon even started to believe she could choose who lived and who died (she didn't kill any underlings though). She was pleasant to the Queen, she tended to cheer her up, make her laugh and was one of her closest friends. It is unknown how she was before it all got to her head. In short, an arrogant jerk started to go too far...

After the Dark Matter started to corrupt her, she became more serious and responsible. She would still sometimes resort to childish antics to get someone to do things (e.g. pushing them, staring at them until they gt the message, ECT). She started to get more focused on her job and talk to the Queen less and wouldn't really cheer her up.(E.g.
Queen Oceine: *crying a bit*

Hydro: What is it, my Queen?
Queen Oceine: You usually...

After the events of the Kirby:Hydro Scuffle, she went back to being openly arrogant like her old self but not MALICIOUSLY. She is still a jerk though.

When she was little, she was like Kirby. She had bad vocabulary, copied and inhaled a lot. Soon she was taught that it was wrong and was taught how to use a sword (not copy ability).

BACKSTORY: When she was baby to toddler, she somehow ended up in Oceanica. There were some monsters littered around the kingdom at that time, so she inhaled people to protect herself (she knew how to use them the same way Kirby instantly knows how to use his abilities in Right Back at Ya!). Most were innocent soldiers or citizens! Soon she was found and taught it was wrong. The soldiers who found her thought she was talented and that she would be a good sword fighter in the army because she knew what fighting meant and could use the sword well because of how they saw her with her copy abilities*... they were wrong. She was only skilled in sword fighting when it was a copy ability! She was taught the ways of the sword for years until she could actually join the army, and many years later she was able to become the top general!

As mentioned in personality, Hydro Knight was cocky, vain and arrogant for all the popularity and power had gotten to her head. She threatened people to not tell anyone how she treated them. She hid this from the Queen, who she was pleasant and fun to.

Soon, she started to get too arrogant, acting quite malicious to underlings and Dark Matter started to corrupt her, she then realized she needed to stop. She became more responsible and serious but also talked to the Queen (who was saddened by this) less unless it was a message or serious matter.

ABILITIES:
-Can breath underwater.
To do with wings:
-She can go faster and glide in water with her wings and also damage enemies when charging into them. They are useless on land so she can only do normal jumps on land; if she tries to float/fly like Kirby and Meta Knight on land, she will end up ruining her landing and hurting herself. She can leap high out of water. (Her wings are always out). The some attacks
Sword:
-She is skilled and has a well crafted sword, but her sword is not magic. She can't do any sort of sword beams and only the close-ranged attacks that don't include magic.
Water Powers (can't be used in water):
-Wave Dash
Rides on a small wave that does damage like Fire Kirby's Burn, only slower and a bit taller (only a little). Lasts for 5-10 seconds.
-Hydro Guard
A small spherical water shield that will wash enemies away from you if they go near, but helps Blippers (if a Blipper comes into the shield they can attack you (it's not very big though so 1/2 a Blipper can fit each side)).
-Aqua Uppercut
Like Vine Uppercut, but with a small wave.
-Wave Wash Away
A bit like Ring Ding Finale but does not bounce off walls.
Corrupted(battle takes place underwater|no soul fight|eye is her weakness and hitting there will do double damage):
Most of her moves are dark versions, unlike MOST of the other bosses.
-Dark Glide
Leaves a trail of darkness where she glided, staying for 5 seconds.
-Dark Sphere (only used maskless)
Fast orbs summoned by her eye (a monstrous scream is a sign she'll do this). Some they follow Kirby for a bit before exploding into nothing.

Extremely tricky for her and barely used
-Exhale
A large amount of water shoots out of her mouth. Barely used and the result of an inhale gone wrong.

She is first seen near the castle when the giant shards of the Oceanica's barrier starts to break in the opening cutscene, and first met when she wakes Kirby and Meta Knight up. She seems to be a bit scared of Kirby (because of how many he's defeated and/or destroyed) but the more you struggle or lose a life, she will become more arrogant and cocky, as she begins to feel like you aren't that dangerous after all.
(Kirby, Meta Knight and Hydro Knight are playable. Meta Knight's wings are bad in normal water areas. Hydro's are bad in land areas.)
BOSS BATTLE (2nd to last boss):
She gets corrupted enough that she's controlled from becoming maliciously cocky again and will lure you to battle in the place you struggled most.
-If it's a whole stage, she's chase you there.
-If it's a certain mechanic (e.g. normal swimming, current, ECT), she'll lure you to an arena place where that mechanic is (the arena is a similar shape to Triple Deluxe's mini bosses).
The you break her mask at the start of the 2nd phase.
RELATIONSHIPS (I do not do ships):
Kirby:
She is first quite scared of Kirby (she had heard about his adventures) but as you struggle more, the more arrogant she gets. But after her boss battle and the events of the fan-game, she is terrified of him even more than before.
Meta Knight:
She tends to randomly talk to him about Kirby. He's usually confused on why she's exactly talking to him. She has some respect for him, but not enough to be ranked. They aren't friends though.
Queen Oceine:
Maybe her only friend (and her closest) and vice versa. She thinks of her as the second best person in the world, with the first being herself of course.
Other Oceanica Generals:
She is well-acquainted with the other generals but sometimes they get on her nerves (and she also gets on theirs with her arrogance). She doesn't look at them as friends and ridicules. When she changed herself because of Dark Matter, they were really confused***.

After the Dark Matter, Oceine became lonely without her there to cheer her up, make her laugh, chat. After the events of the fan-game (where at the end she explained to Oceine what she did to her underlings, angering her), they had become friends again (though Hydro is still being punished). Hydro tends to take off her mask around Oceine.

-Hydro hates children. Mostly because she thinks they're stupid, which is how she looks at herself when she was 1-5.
-Hydro had the phrase 'Osheenc' (sometimes not being completely said (e.g. 'oshee', 'oshe', 'osheen' and 'osh)) when she was little and it was like Kirby's poyo, she had overheard the name of the kingdom in a converation. She has grown out of it.
-She tends to rank others on how good they are. Oceine is ranked No.2, Kirby is just ranked 'Monster' and most others have no ranking.
-Her wings are loosely based off of a flying fish's.
-She has barely any fans due to her past actions** but chooses to believe she has very many. The other generals are more liked yet she chooses to believe that they're unpopular. She's actually a bit envious of them because of this.
-She is undergoing punishment from the Queen. This includes cleaning and being allowed to be bossed around by the other generals (the latter in free time of course).
-Her and Posien are the only generals embarrassed by their faces.
-The soldiers who raised her were actually brother and sister (young adults at the time) who had went to train and also had heard of the 'monster'.
-For a little while, people thought she brought brought the monsters to Oceanica.
-The other generals hate it when Hydro touches their stuff and absolutely DESPISE HER.
-She may have been manipulated into becoming the ego maniac she is today.
-She tends to act like the leader of the generals when she's not, she's anything but to them!
