Saria is a Kokiri, she can't grow up (lucky her).

Unless she leaves the Kokiri Forest. Then she'll start to age like a normal person but she won't be able to return to the Forest (thus eventually she'll die years down the road). The Kokiri all leave the forest at the end of the game and ironically we see Ordon Village pop up in the new game near where the Kokiri Forest was.

No. It was said they would become Stalfos if they entered the Lost Woods (which was near the Kokiri Woods). If they left the Kokiri Woods altogether, it was said they would die but it is not said HOW they would die. Considering they were all at the Lon Lon Ranch at the ending of the Ocarina of Time, I'm betting they eventually grow old (like normal people) if they leave the woods altogether because during Twilight Princess, the Kokiri Woods is gone and Ordon Village has sprout up quite near were the Kokiri Woods used to be.

I'm pretty sure the Kokiri required the protection of the Great Deku Tree to live, thus they wouldn't die of old age, but rather the lack of some form of "protection" magic. *shrugs*

I think Link's head might be a little too big, but I really love the mood in this piece, and the muted colors. It really brings out an almost haunting atmosphere, and Link's expression nails that. Saria is just beautiful.
