As far as Dipper understands things, Mable just gambled the world. Even once Dipper processes it was to save a family member, Dipper is not going to value one person over risking the world being devastated, destroyed or devoured by some multidimensional abomination. Mable's SmileDip hallucination warned Mable to distrust Gruncle and probably with good reason, as this likely played right into Bills plans to create his Nightmare Realm.
