Just one question though. Mind giving me a quick talk-through of the assembling for the front of the face? Call me slow, but its confusing me a bit.

If you want to have the mouth open, with sharp teeth, you use the open mouthed side of the head. This should not influence the bottom. Then you assemble the oval, which is inside the mouth, and put the teeth in upside down (Since you are assembling it inside-out). Make a slit for the tongue to be put in from the middle, where the back of the throat will be.

You'll have to add the top of the face part between the two side pieces. You don't need to use more than one piece if you don't want the face to look different from the rest of the head, but I'd recommend you sewing together each piece before you assemble the whole head if you do so. Then put the ear in where I denoted the middle/back of the head. You need to leave a hole in the bottomish part of the head so you can attach it to the body.
