Hi there!
Well I usually make my ponies with a scrollsaw and a dremel, with help occasionally of a chisel, gouge, or other handtool. And the timeline really depends on the pony, but start to finish I would generally say a pony takes about 10-15 hours, although simple ones might take 4 and crazy ones might take 25 or more.

Yeah I'm trying to do as much other work as I can because I'm feeling very in a rut when it comes to working on pony anatomy with pony poses etc.

You now have my attention. A single simple pose, with all the fluid motion of the ever-physical ocean. This piece is gorgeous and an excellent addition to any collection. I'm unable to make the difference in whether the ears are glued or not, so you have successfully (as always, really!) impressed me!
From a critique standpoint, my only suggestion would be to doodle out some of your poses (I believe you already do) and flip them back and forth digitally to see the anatomy and structure of the creatures you make. The legs on this, as I'm sure you already know are stiff and he seems to be rigidly frozen against a predator, despite the rest of his body suggesting otherwise. Lack of elbows, to be frank. If you aimed to make this one piece, a better attack on the pose would be bringing the legs and paws in, that way the leaning forward allows the weight to be proportionally placed along all four limbs, giving you the little 'push' you need in the pose, and allowing for one solid cut.
