The croquembouche...I remembering making this one for our classes. Almost wish I could have stuck it together with royal icing or even buttercream over that caramel!! Yours is pretty high and your nougatine looks wonderful dont fret. It was overly humid the week we made this one and most of the class had theirs melt before it was completely done. Dont worry about it! My chef told me it was test of patience and fortitude to get those creampuffs into a cone shape...heh
