I'm not absolutely certain, but I know the baker made them specially for the shoot. If i recall, they were frosting with additional sugar blended in as a 'stiffener'. They weren't that tasty :-S but they looked good! At first I thought they were fondant, but that wouldn't have worked out well as the studio was quite warm. Fondant wouldn't retain it's shape, whereas this stuff was quite nearly crunchy!
