The country
Iranshahr is mostly Persian in terms of ethnos, and mostly Zoroastrian in terms of religion. But there are, however, few exceptions. In the western parts of Arwastan province, there are still present Arabic and Syrian minority. Provinces of Gorgan ud Hayastan and Dagistan are mostly untouched by assimilation. The province of Tatarstan is mixed: half of the population are Volga Turkic people, and the other half are Persians who settled there in the 1570s (AD), with the city of Hastarshahr being populated mostly by Persians - division is held in the middle of the province, with north-west being Turkic, and south-east being Persian. Province of Hind is as well mixed territory, but this time not so clearly: some cities are populated in 1750 (AD) mostly by Persians, some by Punjabi; and farmlands situation is the same. The biggest diversity is in Saberistan (not province, but the region which includes all the provinces between Ural Mountains and Pacific Ocean). Most non-cities territories are having natives as majority, with Persians, who abide mostly in cities, being the minority.
The same goes for religion too. All provinces are mostly Zoroastrian, for the exception of Saberistan region, which has Tengrianic-native population.
Although, this is changing, and with each year Saberistan region is becoming more Iranic, because of Iranshahr sponsoring assimilation of locals and further settlement and colonization of the region by Zoroastrian Persians, in pair with missionary work of Mobeds among natives of Saberistan.
This State is an Absolutist Monarchy which is heavily tied with the religious institution, it is ruled by the Shahanshan, who's at the same time has title Ratu, which means that he/she is a defender of the Zoroastrianism, and he/she can suggest some reforms in the religion, but only if co-working with Council of Dasturs.
The Empire is divided into Ostans and Dasturstans. Ostans are regular provinces with general-governor in charge of it, which is being appointed by the Shahanshah. Dasturstans are provinces with slightly bigger autonomy (which sometimes is just a formality and nothing more) controlled by the Dasturs (analogue of bishops).
The capital city is the city of Sarran, which was turned into a capital in the 16th century. Main reasons for making it as a capital instead of Tehran were: 1) Sarran (Sari in past) was an important trade centre, so it was profitable to make it as a capital; 2) It had better climate than the dry Tehran, so it was easier to develop it.
Iranshahr is the only Zoroastrian state in the world.
Neighbours
In the North-West, Iranshahr shares a border with Orthodox Christian Rus', which was united by the state of Vladimir a couple of decades prior to the map. Relations with them are a bit tense, because of border disputes and desire of Iranshahr to turn Rus' into Zoroastrian state, either by subjugating it, or by missionerizing them.
In the West, Iranshahr shares a border with its arch nemesis - Nizzarid Caliphate. Many wars were fought between them, and many died in the fields and deserts of Mesopotamia and Arabia. But as for the 1750 (AD) there were no wars between them for a couple of decades now, which is pretty non-standard and strange.
In the South-East, Iran shares a border with Muslim Bahmanid Sultanate, which was lucky enough to unite most of the India under their banners. Relations with them are almost on the same level as relations with the Caliphate, they're even allied with each other (Bahmanis and Nizzarids).
In the East, Iran shares a border with the Nestorian Tokharistan, Tengriist Mongolia, Confucian Song, and Shinto Japanese Empire. Relations with most of them are neutral, except for Japan, which dreams about building its own empire, overpassing any Chinese Empire of the past.
Credits
First of all, thanks to my siblings AdvisorAlephrattyratterooze  for feedback, and especially thanks to my bro sovietkiller2019  for his advises and feedback.
The premise for the creation of this map was me playing in EU4 mod Ante Bellum as Zoroastrian Persia (Ante Bellum is a really cool mod, so check it out).
I personally really love everything related to Zoroastrianism and Manichaeism, so I was happy to play as Zoroastrian nation with content.
Also, I was inspired by this map, and I really liked the style, which seemed to fit for my idea. Of course, I've added a few things to it, according to my tastes, instead of imitating it fully.
The font which I used is called "Zoroaster".
