They must have a respiratory tract that can double as an alternating hydrolic-pressure system. (Like the blowhole of a whale or dolphin.) Though I'd imagine them firing pressurised water from their mouths would be closer to a sneeze than the mechanism that the aforementioned marine mammals experience: An almost involuntary response to a stressful situation.
Cocoons of water-filled gel... Maybe a form of extended scabbing, designed with the idea of advanced wound-repair? (When most things get cut decently deep, there's always a scar left behind from some tissue that failed to heal fully; I thought that maybe the water-filled gel is a special type of blood-plasma formed from an interaction between the usual blood-plasma of the Eelititre and the protective sac it creates around the wound site, providing a position outside the body for nutrients and immune-cells to be delivered effectively while simultaneously promoting outer skin-cell mitosis for the sake of repairing the wound as quickly and fully as possible.) If you've ever come across the Star Wars universe, I thought of this special fluid inside the cocoon as acting similar to a substance called Bacta, or Kolto (Known by many as a miracle healing material, capable of repairing even the most dire wounds.): A patient would be submerged in a tank of Bacta or Kolto on a respirator if their condition was critical, then, given time; their body would repair itself practically to the state it was in prior to the injury. Smaller amounts were given in an injectable form for lesser wounds when needed.
