I do like to hear the artist speak when they're doing a tutorial. That way I can hear exactly what they're doing and also possibly gain some interesting insight on why they do it that way. I can't tell you how frustrated I get when I find a tutorial on drawing certain stuff on YouTube and then have it turn out that it's a video devoid of any human voice (most often the only sound in the video is of terrible electronic or magical girl anime music turned up to an obnoxious volume level) or worse, overlaid with loud, terrible music AND locked into fast-forward with seemingly no real intention on the part of the video maker to actually try and help the viewer learn what they thought they'd learn.
I understand all too well now that drawing is a lengthy process, and that not everybody has a good mic, but it seems like people could put a bit more effort into these "tutorials" if they really tried.

Yeah, I prefer to listen to the artists, too. xD That's why I like Zooc Draws. He adds his commentary over the video afterward, since he has to do time-lapse to get start-to-finish in one video.
But yeah, there's speedpaints, time lapses, and guides/tutorials, that I'm familiar with. The first two are, in my honest humble little opinion, geared more to show off or demonstrate a process, not to teach. If there are guides or tuts that do what you described, I, like you, would disapprove.
I'm probably going to test the sound quality of using a Rock Band microphone with my PC, since I don't have a headset and I can't find the boom for my husband's headset, and I'm not messing with his Snowball. lol

Aaannnd I have to delay the vids because I cannot make that mic work with me. It's too quiet. That might be what some of my commission funds go for: A good headset.

Might be able to borrow husband's headset, maybe. Now all I gotta hope for is that my kids both go to bed at a decent hour, and I might be able to do a vid tonight. lol
