I think it is a good idea to change her hair colour from Blue to Blonde and eye colour from Purple to Black, as the later are possible colours which makes the character more real, less mary suish.
I hope the list thou mentioned don't actually describe things about her. Veganism was invented in the 20th century and was quite frankly not even possible before, as humans need the proteins of meat and other animal products like milk and eggs, so until we found ways to "cheat" with dietary supplements being a vegan simply meant being dead.
And people also had more important things to care about back then. Veganism is namely also a sign of decadence and can only exist in a society that is in decadence. Had it been physically possible to be a vegan without modern dietary supplements, the only other time period that veganism could actually have existed in was late state Roman empire, like the 3rd century.
As for daughter of a king, I would generally consider it to be a bad idea, but it depends on the time period.
If we talk modern time, that is after the outbreak of world war one, then there is only a handful of countries she could actually have been from, like Sweden or Belgium, and every one of them would constantly have to hide from the press, think of Princess Diane.
However, with cleaver writing it could work, The Private Life of a Modern Princess, especially one that weren't heiress apparent, but it would be difficult.
In the industrial age, 1815 (Battle of Watherloo) -1914 (outbreak of WWI), especially if it was in one of the smaller remaining German kingdoms.
However the 17th century doing the age of enlightenment might offer the most interesting epoch of a princess character.
But it would still be a lot easier to just write her father as "a rich man" rather then as the sovereign ruler of a nation, because then a lot more settings would open up. And it is important that many of the features that we think makes our character special, is really just things that makes them into 2 dimensional Mary Sues.
The less special our character is in the greater scope of things, the more special we can make her, as it will be easier to describe her as a person, rather then her as a function. Because she needs a very powerful personality for it to not be eclipsed by her function as a princess.
Emma Smith from down the lane on the other hand, well there is noting special about that, so here her personality have to do all the work.
