And I orignially came up with the idea for the story to explain where my sword came from. You made the sword for me in exchange that I helped you with your research. Although I didn't know at the time that it meant being the lab rat.

True, but actual shapeshifting is hard. Transforming is just an illusion, although it may trick others into percieving that you're something else it's easily detected by scent or sound. The leaves actually change you into something by cycling the bio-energy i such a way that your body changes to compansate for the change. Which is why the oiroke-no-jutsu leaves came up. It was the most drastic change with the least amount of risk to our bodies.
