This is Camalottale:
Frisk is "King Arthur" with a magical sword called Mercy.
Chara's sword would change names to something similar to Genocide.
Sans would be Merlin.... definitely. So Sans would end up in robes meaning less bone for me to worry about....
Pap and Undyne would definitely be knights of the round-table.
Alphys would be an alchemist since those are scientists back then.
Monster Kid.... I would probably make Undyne's page.
Tori would be the lady of the lake... who gave and protects Arthur's sword.... so she would give Frisk Mercy
Mercy would be a sword that can't kill but frees a monster from something.... each monster other then Tori and Sans would be corrupted by Flowey/Mordred and using Mercy on them frees all of the Monsters from Flowey's control.
Sans and Tori would be the only free monsters... cause it would make sence that Sans is helping you then if you are on a Pacifist run.... and why he would kill you on a Genocide one
Sans would have to wear something on him to make it seem like he's under Flowey's power.... each monster will be wrapped in vines until freed... like this: Flowey possession
Each monster will still ACT like themself but Flowey will have ultimate control of their actions. Like... Pap will still be the puzzle loving dolt but he won't be able to be nice to or help Frisk out until Frisk fights him and frees him from the vines. And the vines will be on EVERY monster other then Sans and Tori.... so Frisk will have to free even NPCs/Non-enemy monsters like Grillby and Monster Kid.

the idea of Sans works and It works with the idea of being OP.
toriel makes sense,
papyrus and undyne sound nice,
I'm think papyrus is some kind of sidekick, WITCH is cool (did you like the pun?)
alphys has good character.
things I have questions about:
If GaStEr was a character, what would he be? (well, maybe the first Alchemist)
if Frisk did genocide, how would the legend end up, would he/she leave the underground and prove to villagers that he/she should be king?
what would Frisks gender be? it sounds like your set with him being a boy.
and that's all I have to say, I think you should make this a game, book, fanfic, whatever! I love the story and I think you should go with it!
now I share my AU, SISTERTALE
in this AU, ENNARD and his children (sister location characters) find a way to go to the surface with out scooping the player,
digging to the surface!
ENNARD digs his (yes in this world he's a male) way to the surface and sees a house and thinks they can live there.
ENNARD sits down and starts the TV.
10 hours later ENNARD find to see a blue, big, light eye
but yea, if you can tell, this store is a crossover of SISTER LOCATION and UNDERTALE.
ENNARD is a father in this AU and will SCARE anyone who as plans to hurt his kids.
so that's my AU idea, again I LOVE you idea, it's perfect! I hope you get everything you want in you life.

Frisk is hermaphroditic.... both male and female in this story. Frisk originally goes to MT. Ebot to prove to the villagers that there is nothing to fear about the mountain and is looking for the legendary land of Camelot. Frisk only becomes king if it's a pacifist route, joining humans and Fae under one rule of peace - creating the legendary Camelot with their kind nature and gentle hand. A genocide route Frisk is taken over by the soul of Chara the black knight who believes that the only way to free them and restore their brother is to kill everyone and use the power of all the souls gathered to break the barrier and revive everyone after they are done.
Yours sounds cool too.
