I thought maybe for Splatter Doo, it could be three splatter marks with the base colors red, yellow, blue, plus a horseshoe in the middle?
She's a clumbsy pony that likes to hoof paint mostly but is also a good painter in general...

Ruth likes scaring people for fun- she can turn invisible for small periods of time. Maybe a jack-in-the-box with a bat coming out of it? Or something...
As for Apphia, probably something to do with Apple Cider seeing as that's what her design was based off.

When you draw them, you could put a picture of their cutiemark in the blank space beside them somewhere?
