I vary between woodblock and zinc etching, hard to say.

I've never etched onto zinc, do you know how it is different from copper? Does it make a difference in how the image turns out?

Copper hold higher fidelity of marks, so you can make more prints off of a sheet of copper than zinc without marks fading. Zinc's considerably cheaper though.
