In response to your question about b&w and colour in photos:
1.Highlight the colour spots you want using either freehand/polygon/magnetic selection tool or magic wand tool (hold shift if you want to make multiple selections)
2.Select Inverse
3.Under Image Adjustments/Hue/Saturation lower both Hue and Saturation.
and you're done.

I hope my directions make sense. (I'm assuming you use Photoshop or a similar prog.)
