It's kind of a weird word. Usually it refers to a complete or impressive collection of arms and armor. But it could also refer to a single piece of armor. Or a complete suit of armor. Or an impressive assortment of something. Or a display.
Because a panoply could be a lot of different things, you usually have to clarify after each use. This is one reason no one uses this word anymore.
