Paula comenzó a corta edad a aparecer en los medios, a los 3 años protagonizó un comercial de Kodak y más tarde fue cara de las galletitas Nene. Pero no fue hasta el 2003, después de ser elegida ganadora de reality show de modelos Super-M, que comenzó a ser reconocida, en tan solo poco tiempo su carrera fue en ascenso, participando en desfiles reconocidos en todo el mundo.En ese lapso, trabajó como conductora del reality 121 Group y participó en 8 capítulos de la serie Niní, protagonizada por Florencia Bertotti y emitida por Telefe.
En el año 2010 se unió a los empleados de los hermanos Willy y Paul García Navarro, Multitalent Agency. Ese mismo año participó en el reality mediático Bailando por un sueño 2010, en el que se consagró como artista ya que mostró su carisma y grandes avances con respecto al baile. En este certamen Paula conoció a su actual pareja, el productor de Ideas del Sur, Pedro Peter Alfonso.
En el 2011 Chaves nuevamente condujo junto a José María Listorti en Este es el show y junto a Mariano Iúdica en La cocina del Show, además de su propio programa, Extra-pequeño junto a Darío Lopilato.
Después de un año alejada de la actuación retomó este trabajo en unos capítulos en la tira Los únicos, representando a una prostituta con el apodo de Roxy y fue convocada para protagonizar el videoclip de Ricky Martin Frío.
Además, se tomó a Paula para que recreé a Belén en el Agente Camacho como papel principal; ésta sería su primera vez en cine. También ha regresado a las pistas de Showmatch luego de que la actriz y ex-Baywatch Pamela Anderson abandonara el certamen.
A finales de este año es convocada para protagonizar la comedia Despedida de solteros junto a Pedro Peter Alfonso y Nazarena Vélez, Eugenia Lemos en una propuesta teatral en Villa Carlos Paz para el 2012.
En el año 2010, Chaves fue convocada para participar del programa de Marcelo Tinelli, Bailando 2010. Paula demostró sus habilidades en el baile y con su carisma llego a la final del certamen siendo la sub-campeona del certamen por una mínima diferencia en la votación telefónica frente a Fabio Mole Moli.
En el año 2011, Paula fue nuevamente convocada para el Bailando 2011 siendo en primera instancia reemplazante de la actriz y ex-Baywatch Pamela Anderson, llegando a ser la famosa representante del sueño. Con su compañero Pablo Juin, en su paso por la competencia, dejaron fuera del certamen a Fabio Mole Moli, ambos finalistas del certamen pasado y a la vedette Cinthia Fernandez con una amplia diferencia de votos. Llego a las semifinales en la cual perdió ante Tito Speranza por una amplia diferencia en la votación telefónica.
