Kubo is just the author(?) for YOI, through truly I don't know her or anything about her either. B^P I get some articles and interviews passed onto me from people but she seems really nice.
The first season has received amazing support and won so many awards since it has been out so I hope they'll try their best with the second season. ;;

I hope they do at least mention the kiss, but since it's not the main focus of the show they may not discuss it much.

Well I don't know if you can read Japanese or if you follow the creator of the show's twitter but she did say she doesn't want to tell a story about someone who wants a lover or who wants to get married.
I think their relationship is going to be an underlying topic during the entire anime as it has been so far, but I'm not sure we'll be getting any direct mentions of the events of ep 7 straight away.

It seems that a lot of the milestones in their relationships are met behind the scenes so who knows what they'll give us. 

BUT I'M SO EXCITED.
 Also since they'll be in Russia that opens up a lot of possibilities to get to know about Victor's personal life more or Yurio's personal life more. I hope they exploit the setting well.
