I actually plan on cosplaying Suikoden III Yuber, and Suikoden III Albert Silverberg at some point... I just loooove them.

I had also considered doing Flik from II at some point, but I'm undecided.

Luc is another one I have in mind, not sure if I'm going to do it or convince my friend to though. I wasn't a huge fan of Suikoden I Luc, but he's awesome in II and especially III.
