HA. My tea this morning is rooibos jasmine. o-o
It's steeping so I don't know how it tastes yet. It's very red. If it's decent I may mix it with chamomile? I loves me some chamomile.

No reason why not. Rooibos has such a mild, earthy tone, it can easily mix with just about anything. I love it by itself, too. Tell me you're not using tea bags... evil cotton swabs in your hot water, don't fall for it.

Anyways, tell me how your tea tastes. Once I'm out of jail in a few weeks I'll give you a couple great tea-infused recipes. Fish steamed in rooibos is really wonderful.

Tea balls are great, but inconvenient because of how little you can put into it at a time. No, I boil my tea, first off, in the true Indian style, heavy soup pot and a stove. Just put the tea material into the boiling water (for some things like masala chai, I like to put the mix into the water when it's cold, then bring up to a boil on the stove to cook the spices), take it off the heat and let sit and steep till the desired potency is achieved. I go by a five minute ritual, usually, except in the case of rooibos where I like around ten minutes. Then just strain into a thermos or directly into a mug, using a simple sieve that you'll feel comfortable enough with not to burn yourself to death.

COTTON SWABS IN YOUR WATER EWWWWW

Oh, and by the way, a bourbon-water ratio (about 1:2 respectively), brought up to a roaring boil, makes an EXCELLENT base for rooibus to steep. Contrary to popular opinion, the alcohol does not entirely boil off into nothingness, but it's severely reduced in content at the boiling stage.

Really great site where you can buy bulk leaf, for cut-throat prices and the best quality around. Their masala chai blend is to die for, I can't stop raving about it, it's perfect in all ways and I'm a stickler for a good masala blend. Also, their spices are fresh, beautifully handled and excellent quality. Shipping is minimal if you get enough stuff together in one shipment. I can't stress enough how cheap their teas are - it's about a third of the price compared to typical store-bought tea-in-cotton-evil. AND some of these teas could have been sitting on the shelves for YEARS before you come around to it. Much better to get quality direct.

o_o -_- o_o Well I don't have a stove to boil tea upon at work sooo... I reckon I'll stick with cotton swabs in my water.

I boil the water in my handy-dandy electric teapot at a temperature depending on the variety of tea and then I dump the boiling water into a teacup with a cotton swab filled with whatever combination of tea I want to drink, then I let it steep (5 min for black, 3 for green, 7 for herbal or white) then I drink it. o-o

I got my big box o' loose leaf tea from adagio.com. This website you link is pretty cool! Good variety of teas and very good prices! Weirdly good prices...

AND YES. Their prices are awesome! And believe me, I've ordered a number of things from them, it's all extremely good quality stuff. The teas aren't sun-burnt or discolored, everything has the impression of being stored in proper ambient temperatures to avoid that nasty oil situation on some of the darker pekoes. Dude, seriously. o_o My source rocks, I promise you, it's totally worth it.

But now wait, see, this is where we had a bit of a misunderstanding. While I still don't like the cotton bags you fill yourself, they are INFINITELY better than the store-bought cotton-swab bags already pre-prepared. See, you didn't tell me you filled your own bags. That's a little different. I'm talking about those nasty... been-on-the-shelf-17-years tea bags ala Lipton. ANYWAYS. Still think you should just put the leaves directly into the kettle, then fashion a sort of sieve/spout at the pouring tip to filter out the material. That way you can even reboil the same leaves later on - just keep 'em in the pot, re-fill when you want and off you go. Saves money, stays true to the tradition of tea.

But then I read the instruction manual, because this thing was expensive and I didn't want to screw it up, and in big bold letters it cried, "DO NOT PUT TEA DIRECTLY INTO THE KETTLE!"

That made me sad. o_o

Anyway, I'm right there with you on tea bags you buy in the store. I used to like some of them, like the black Lipton accented with spearmint or orange and the like but after making my own it just all tastes bland and blase. I tried three different varieties of pre-bagged chai and it was all horribly bad compared to the stuff I was given to drink by an Iraqi.

You know, that makes no sense. o_o Why can't you put it directly in the kettle? Are they worried about the oils...? In which case, that depends on the kettle. How can tea oils cause any more damage than raging/boiling water could? I can understand it iff'in you don't wash out the pot after using it, or if you just leave the tea to settle in there. That could cause problems with the kettle... Huh. I really don't know. Maybe it's a matter of something more complex than my little mind can fathom, but after a second's distracted research on google I found two comments saying not to stew tea directly in the kettle, without any explanation for why. I detest being told what to do, especially if it's something that's terribly counter-intuitive, without the blush of a reason or explanation why.

ANYWAYS. Good. Pre-bagged tea is evil. And masala chai should be made with real spices, whole spices. That link I sent you - they have a great blend, I've mentioned it before. What's awesome is that the spices are whole, visible, and fresh in the mix itself, and the spices are packaged with the tea, so they've had a chance to infuse the tea leaves themselves. I do, however, prefer a couple more black peppercorns in my brew, but that's just me; I also prefer to boil the tea in an equal water-milk base. I'd prefer to do it with all milk, but 98% water/American milk doesn't taste good enough for that. And it also boils over like the dickens if you're not hawkishly paying attention to it.

I use the same pot I use to brew coffee on the stove. I don't bother with fancy coffee pots - coffee here in the States isn't really coffee in my opinion, so I just toss the Folgers garbage straight into the boiling water and let it steep. Tastes fine, easier, and cheaper to make. That same pot is what I use to brew tea in, in a very similar fashion. I have one massive thermos for coffee and a smaller one for tea, simply because I'll drink about 12-15 mugs of coffee through the day, about 3-6 of tea (one or two thermoses full, respectively).

That's why I'm permanently hopped up on caffeine. Think of AA meetings - lots of coffee there, and it works. That's why my reply is as long as it is, too. And why I can't seem to stop typing, because I'm enjoying the tap-click-clackity-clack sounds I'm making at the moment. Tap-click-clackity-clack, tap-click-clackity-clack. I'mma lose my mind any day now, you'll see.

I'm in hiding. o.o Taking care of court issues, staying off the radar otherwise. I'm looking to buy a small plot of land out here in jabib'ville, put a modest little trailer on it, and write. Writing has become my only focus in life at the moment, the only one I've ever wanted, so it's about time to just hunker down and focus on that and that alone. Very alone. So staying away from civilization is kinda integral to the plan.
