Description This is a very easy and delicious dessert i learnt from a lovely cooking book, it's very good for using too ripe bananas.

For around 16 slices:
125g margarine or butter
125g sugar
125g (wholemeal) flour
125g walnuts, chopped
2 eggs
2 teaspoons of baking powder
2 bananas, mashed

Cream the fat and the sugar in a bowl, until fluffy and light. I advice taking out the butter from refrigerator some hours before you want to make this dessert. The butter has to be soft to be able to cream with sugar.
Beat in the eggs one by one, adding 1 tablespoon of flour with the second egg. Then tenderly fold in the remaining flour mixed with baking powder and at the end the bananas.
Spread the mixture evenly in a lined and greased 20cm square tin (or something similar, i still don't have square pan )
Sprinkle with the walnuts and bake in preheated oven (Gas mark 5 or 190C) for 20-25 minutes until the cake springs back when lightly pressed.
Leave in the tin for 2 minutes after taken oout from oven, then cut into slices and transfer to wire rack to cool.

Great Andi, Oh, I forgot to tell you that my wife has baked a very nice cinnamon rolls from a week that were delicious. I hope she bake another rolls and I will take a photo for them.

Yum My mum has a similar recipe, but she never puts walnuts in them Maybe I should try that one day eh?

The walnuts are only on the top, i don't mix them into the dough Thankies!
