You can technically eat it, but you probably wouldn't want to. It's made of isomalt, which is sugar that's been chemically altered somehow to make it better for pulling/blowing/etc. It's still sugar, but it'd be like eating plain splenda that's been melted down.
Not my first choice for eating, but lovely for pulling!

This is a very pretty sugar rose! I really like the red color you got with the sugar for the rose petals. It's not overly bright and has a nice deep tone to it. The sugar seems nice and shiney too!
The only thing I would say is that the middle of the rose needs to be closed like as in a real rose. Unless I just can't see the middle base in the shadows. If that's the case, then I think it looks better if the first petal wraps 3/4 of the middle, and then the second petal should unfrul a bit and not wrap the middle completely. This is only my opinion of course, it's been a while since I made roses in anything. *favorites*
