From the internet: "Unlike the Chinese army, Shan Yu saw Mulan as a soldier regardless of gender. He never questioned her skill or strength, and didn't hold back in his attempt to kill her. This is because Hun woman and more rights and a higher social status than their Chinese counterparts. They could join the army and fight, choose and divorce husbands, and some even held high position of leadership in their communities."

In an AU where he won't be so blinded with rage, Shan Yu would respect Mulan deeply for defeating him and would likely to try and win her wild heart. Mulan would definitely enjoy the respect and freedom of being herself and the hawk is a nice bonus.

ARC adds: This was total fun to draw! Due to the wild nature of this ship, I gave Mulan one of her first concept design boots that looks like something a Hun woman would wear. (please check original concepts, they're so pretty!)

Also I found somewhere a concept art of Shan Yu where he actually looks like a nice guy. So everything clicked for this AU.
