I guess, after thinking about it more, the main issue I have here is: if this is because she has a "fiery" personality, does that necessarily mean the "best" firebenders are more tempermental that other people?

This talk about Korra being a talented Firebender and how it raises eyebrows is really getting old. Just take it for what it is, she has a fiery personality so don't act so surprised.

Yes, when creators contradict their own canon (i.e., Roku and Aang having trouble with their opposites) it's going to raise eyebrows. There are some good fan theories already floating around to address it. We want a discussion/explanation of it, not necessarily that it has to change.
Forgive us for not wanting an overpowered God-Mod type character, who turns everything she touches into gold with no effort. I will be more than content if she has trouble with airbending. (or lightningbending, or metalbending, or healing)

First of all, it has been confirmed that Korra's struggle in the show will not only be to master airbending but to also master the spiritual side of bending. Korra is anything but God-mode, she has much to learn and blocks along the way.
Secondly, Iroh said himself that fire is the element of power, the people of the Fire Nation have desire and will, their energy drive them to achieve what they want. It has nothing to do with racism, they are different people with different ways of life and dominating personality traits due to their natural elements. The Avatar philosophy that separation is an illusion does not mean that we all are the same, it just means that different people can coexist in harmony. The teachings of the Sun Warriors is that firebending can be in harmony with nature by being driven by willpower and the energy of life, not just rage and destruction. Willpower and determination are strong forces in a firebender's spirit, and that's what was driving Iroh. His passion was to help others and himself find their own way in life and to restore balance to the world.
Third, Aang did have problems with Earthbending but he conquered his block in a few days. After that he used Earthbending regularly to the point of it being his second most used element. Korra might just be an oddball who had it easiest to learn waterbending but progresses quickly in the other two due to her physical capabilities, a prodigy perhaps? Airbending is the most spiritual bending-style, and since spirituality is the hard part for her it gets in the way, not to mention that it's the only bending-style that's not "mainstream" in their world. The creators have made it clear that the world has changed and each Avatar is different from the other. The clues are right there in the show, it's explained. They train her from a young age and she happens to be physical prodigy, so the three that require more physicality than spirituality comes easy to her. The new story is more contained, it focuses only on Korra's struggles after mastering her first three elements. There's no point in delving on it, it's a simple backstory of intense training nothing more.
There you have it, simple as that. No need to write endless discussions, and no need to keep this argument up, just take it for what it is. It's explained.

Ah, okay, I haven't come across whatever leak about airbending that was.
"dominating personality traits" can have unsettling implications to the real world, but I agree with you. It is postulating a certain type of person, a bender, so that doesn't necessarily mean something negative.

I most certainly hope they DO show Katara teaching her in flashbacks!!! D-: That will be awesome. (and, I'm crossing my fingers for Toph, too) The way a person learns is never pointless, and the relationship between student and teacher is very important to someone's development.

Korra's pretty much like what Toph would have been if she wasn't blind, and was the avatar

Yes, I'm just glad that they probably won't make a sequel, that means they'd have to show Toph, Azula, Suki (assuming they didn't write her out since she wasn't in the first one), and others. They'd probably butcher them too.
That being said... Sokka is my second fav character and it hurt my soul when I saw what they had done to him...
