Modeling is only a half of the final shape. There is something called "displacement map" - a texture, that influences the surface (like map of height). So I made quite simple apple with a hole, and then "painted" all those geometrical details.

thanks, i know - black bg fits very well in most cases. but white sometimes looks great too, especially when dealing with ice. And there is no hdr, the whole lighting is artificial

not dome, but simple plane lights. The back one is strong and has blue tint and the front one, giving orange tint. Dome wouldn't give me this reflection on the apple and lens
