I got a clear shot photo of a blue heron/egret taking off with the water splashing up from behind it. Mainly due to persistent, respecting the egret/heron since of space, and dumb luck (one of my first photos). Flight shoudn't be too hard it just a manner of getting a clear shot that is the hard part (looks like that isn't a issue for your location through ya lucky duck).

As for fight and courtship dances I wouldn't know. I don't know about white ergret/herons from experiecne at all. Blue egret/heron where I go never really get around each other. The only exception being seeing one coming in to distract me from one I describe photographing in my first few sentences. Which after the intial one took off it follow.
