None of the characters have names, just titles. It literally just is "Priestess".

Then is Onna Shinkan the Japanese name for Goblin Slayer? It sounds like a name.... But I don't speak Japanese, so I wouldn't know.

That's her title in Japanese, it just translates into Priestess. Goblin Slayer's name in Japanese is still just "Goblin Slayer".
The whole world is just a giant RPG, so the characters are just called their race and class in most cases.
And this is just confirmation research on my end. I...prefer dubs over subs. But to each his own, as long one enjoys the show itself.

Hmm, I watch the show, but I didn't even notice that they literally NEVER say someone's name. 
I agree with that mentality. I watch some animes dubbed too. Like Ace Attorney and Dragonball Super. Mostly because I just know the English versions of those. Watching Dragonball Z was part of my childhood, so I don't want the newest season to be different than I remember if I can help it. And Ace Attorney has different names for the characters in the subbed, so the pun names don't translate as well to me unless it's in English.

Ah this look beautiful! Very nicely drawn! I love how the background is dark but the front springs at you! Also adoring the feathery end of the cape/dress! And the weapon is absolutely gorgeous!
