Phoenix is a European breed developed from the long-tailed chickens from Asia mixed with other chicken breeds so they would become hardy. It's often confused with the Onagadori, but it's tail doesn't reach absurd lengths. Most are not very close to humans and doesn't enjoy being disturbed too much.
I picture the rooster as a someone who looks almost similar to Onagadori's design but he doesn't really enjoy being mistaken as one.

Sebright on the other hand is a true bantam known for their lacy patterned feathers (The silver variety looks just like a 2D lineart drawing ). It is one of the few chickens where the rooster have hen-feathering, where there's not much difference between the plumage between both hen and rooster. The roosters also don't have the 'sickle' shaped tail feathers common in other roosters.
I imagine it as a feminine looking character who wears dresses but its actually a dude lol
