Ah, gouache makes sense now 
I've never painted watercolor on anything but white and you have to preserve the white of the paper for your light areas.

The neck is usually close to the length of the head so I think it's quite ok. I also used a reference for the horse. Does it look in any way bad?

I love the color scheme you have going in this - it’s really evocative of the freshness of spring. The horse part of the unicorn is really well observed, and it’s obvious you have a good understanding of the basic underlying structure of this animal. Specifically, the use of complementary purple for the darks, and golden yellow for the lights is well applied. However, the way the horn attaches to the head doesn’t seem to be at quite the correct angle - really it should not be so steep, as the horse’s forehead would normally rise at a higher angle. You’ve used atmospheric perspective to your advantage to create depth in the forest, but the edges of the trees could be softer/fuzzier, as they compete with the light colored unicorn for dominance in the painting. Also, let the transition from bank to stream be softer - most streams have higher banks, or the plants grow right down into the water, blurring the line between solid ground and stream. But really, this is nicely done, delicate, and the horse’s sweet expression is a real heart-melter.
