That's why you got to use the natural cave environments. I usually play with 60-80 max openness. Leads to some nice big open chambers like this. Building off of the stalactites, you still have to be careful of collapsed constructions when you mass designate an area to be built. A canceled job can cause entire sections to come tumbling down. (Damn you dwarves, those animal people are 20 Z levels bellow you! How do you even see that far?!)

So you do play. I haven't touched this in a long time, though, even the pitiful failures were oddly memorable!
The bigger question for me, is, what's the limit? What makes a tunnel unstable?

There is no such thing as an unstable cavern. Sometimes world gen makes isolated obsidian patches over magma pools or volcanoes, but those will collapse when you embark with a "A section of the cavern has collapsed" notification. Sometimes it even punches into the underworld.
I've not had issues with stuff collapsing in caverns though. But even though this was based on my experiences with my (heavily modified) dwarf fortress play through, I've changed things around a little for the sake of A E S T H E T I C S.
Also, dwarves by default don't get laser rifles. Or undead Liches.

huh, I heard of booby traps using collapsing blocks on top of monsters, or just to seal horrors from the depths off. or the guy who had his economy destroyed by a cat lady (no joke) Hitchhiker's Guide Style (one of the later books has a planetary economy ruined by shoes in much the same way) and built a giant collapsing trap to annihilate the entire failed Fortress. Or boatmurdered.
So I was always afraid of accidentally digging my own deathtrap!
Fun dwarf designs though!

Don't forget the dwarven superweapon of a paved sky with a linked collapsible support... and the mermaid breeding program to harvest their bones. Dwarf Fortress really does create some wonderful stories.
ASCII art just lets the imagination bloom. I love rogue-likes, and their other lo-fi ilk. Some of them have more gameplay innovations, and sheer fun than some AAA 'blockbusters'.
