I'm always attracted to pics with brilliant colors. I don't know how others react to them but I'm certain I'm fairly similar to most people with that. I'm always struggling with the colors in the renders that I craft. It can be tricky to convince yourself to switch it up. I was never good at video games, I'm more the computer RPG player and their colors are always pretty bland.

I think the saturation has some appeal to it since we dont see it in nature, so when we notice it here we are drawn to it, at least that is my case

Not that we don't see it, we do with flowers when they are trying to attract attention, and with a few animals who are trying to let us know they are dangerous and stay away, but it's rare - and our brains are kind of hardwired to notice it because it's usually IMPORTANT.
I'm an amateur: I had to look up "saturation" to figure out what it was. And yes I sometimes add additional color depth to textures that feel a bit lack-luster.

There are some interesting artists who do excellent but simple line drawings on white paper touched up with one texture in full color, those are quite amazing. One bright color against a stark white background is a neat contrast.
