did you use any structure paste? i havent got any and the sky looks really a bit like it.

No, I didn't use any structure paste. Although, I have used Liquin Impasto at times in the past. The texture in this sketch is achieved by letting the paint dry and 'stiffen' and then working it with a stiff brush and/or palette knife. By painting on cheap paper the oil is quickly absorbed leaving the paint dryer and 'gritty'. Please note:Β I can't recommend painting on paper for anything you hope to keep over the long haul, as it is not a viable support for oil paint; but for me it has been an interesting experiment to see what kind of effects I can get for primarily quick oil sketches.
Another way I sometimes get a textured effect is by adding various sediments to the paint, such as sand or crushed up pepper, - or even glass! I recommend experimenting with all kinds of materials/mediums, tools and supports.

How long, on average, would you say a painting like this takes you to complete? What about figure studies? How long do those typically take?

Depending upon the concept, the size and/or the purpose (i.e., as an exercise or preliminary sketch, etc.) figure studies can take anywhere from 15 minutes to 8 - 10 hours; on average, probably around 6 or 7 hours. A landscape sketch like this one typically takes me 1 to 3 hours to finish to this stage.
