Lol, that's a good question. There was an old episode where Applejack was super tired and kept messing things up, and she tried to help Pinkie bake muffins, but misheard all the ingredients. Anyway, Pinkie Pie presented the muffins to a group of ponies, among which was Derpy. If you listen carefully in that scene, you can hear Derpy say from the back of the crowd, "Mmmmm, muffins!" Ever since then, people have fed her nothing but. As to why fans don't seem to think she eats other bakery items (or really any other food), I'm afraid I can't answer that.

Favorite Snack? Those little Pizza Rolls, my mom buys and makes them for New Years and Super Bowl. She makes actual Pizza on Super Bowl as well. Usually its take and bake Pizza, not her special homemade Pizza, that she makes entirely from scratch. Well, okay, not entirely, the sauce and cheese and peperoni and such are all packaged, but she makes the dough for the breading from scratch. She even has her own bread machine for it.Β Actually, she has several, so she tends to make at least 2 or 3, one with peperoni, one this ham, ground beef and bacon and one plain cheese one, usually for my sister.
Other favorite snacks though? Onion Rings, Barbecue chips, Cheese sticks, and of course, a can of Root Beer to wash it all down (or a cup/bottle of Root Beer, whatever, I'm easy.)
