They are tough to fight indeed. They were a surprise for me on my second character. Here is my story. Warning, this is a long message. You want a summary of it, just go to the bottom.
Since ancient dragons don't randomly spawn until your character reaches level 30 I was taken by surprise when I first fought one. The first character I made only got up to level 27 before I started over. In that time I fought regular black dragons, blood dragons, frost dragons, and a few elder dragons. While on my new character, I was in the dungeon to get the Horn of Jurgen Windcaller(spelling?) and I stayed in there for about six hours "dancing" with a giant spider. By the time I decided to stop using the spider for leveling my skills, I got my block and light armor skills up to level 80 and my restoration skill up to level 65. I even healed the spider in order to keep it alive and level restoration faster. I also leveled alteration, conjuration, destruction, and one-handed a little. By the time I was done I was level 28. After finding a few more shouts and power leveling my destruction skill so that I could get the 'impact' perk, I reached level 31. I received a quest in Riften from a girl who needed 20 nirnroot, 20 nightshade, and 20 deathbell. On a side note, I also don't fast travel very often, I like to walk. While traveling through the tundra just northwest of Whiterun looking for nirnroot, I encountered my first ancient dragon. It landed on the ground right behind me, fried my health really low and then did that finishing move where the dragon picks you up in it's mouth, shakes you, and spits you out. Killed me in about five seconds.
I was shocked to say the least, so I went out to find it again after respawning at an autosave not far from where I got killed. I found it again in the same spot, this time not by surprise, and tried to fight it. Luckily my impact perk worked on the ancient dragon, but with it's insane amount of health and my limited magicka it was tough to bring it down. I had to time my spells to hit it at the last second so that my impact perk would work and it couldn't bite, fry, or freeze me. Took me about 15 potions and fifty cheese wheels to stay alive through that first ancient dragon fight. I finally killed it, got my gold, got my dragon bones and scales. Then I started walking west to find that nirnroot, then another ancient dragon popped up. Luckily for me, a mammoth distracted the dragon long enough for me to get it's health low so it would land. So that fight was a bit easier. Then while walking up towards the marsh to find some deathbell, another ancient dragon pops up, this time attacking Morthal. It started going after me and I did everything I could to avoid being hit by it's breath attacks. I hid behind houses, used wards, anything. So that one went down after a while. After that I had the 20 nirnroot, nightshade, and deathbell that I needed to give to that girl back in Riften. Just as I was passing through the mountains southeast of Windhelm, the game decides to troll me with another ancient dragon. Four in a row. After almost getting killed in that fight, I just decided to fast travel to Riften. I gave the girl the herbs and felt a little annoyed at the fact that I traveled all over Skyrim, faced four ancient dragons, and got killed once all over a bunch of flowers. I think the game took pity on me because my next two dragons were a frost dragon and a blood dragon.
Don't get me wrong, ancient dragons are awesome and a lot of fun to fight. Not to mention I got rich and had a healthy stockpile of dragon souls in the end. But all that for some flowers... It feels kind of anticlimactic.

Greybeards: "Oh, was she on her quest to defeat Alduin?"
Random Person: "No she was picking flowers for someone."
