Deadpan means he doesn't tell the joke all "wacky."

A good example (besides RDJ here) would be the movie Airplane, from back in the day. They hired serious dramatic actors specifically so that they would deliver their ridiculous lines with a straight face.

Where he says something totally hilarious with a straight face, as though it's just some run-of-the-mill comment, like he's talking about the weather or something. No expression whatsoever. Just funny comment.
