They are all good. 
As for Harry Potter...I recommend the movies, but I recommend the books more. If you're going to do one or the other, skip the movies. If you only read the books, I judge not.
The Godfather is excellent, but is also very, very dark and serious. Not for the light of heart.
...And I don't know what the big deal is about Jurrassic Park. /unpopularOpinionPoffin It's a glorified monster movie with a quirky mathematician in it somewhere. Maybe it was cutting edge when it came out or something. I dunno.

I have known two people who have not seen Star Wars either. My recommendation is the same now as it was then. See the first one that ever came out. I won't leap down you throat. I haven't seen most of the Harry Potter movies or The Godfather. *shrug* Have you seen any of the Indiana Jones movies?

Don't feel too bad. I can't sit thought Lord of the Rings (i'v tried) and i have never seen The Godfather ether. I would recommend putting Back to the Future at the top of your watch list. It's really good and my favourite out of everything listed.

I've only seen all of Pirates of the Caribbean and a few movies of Harry Potter, as well as a few episodes of Star Wars.
Seriously though, you should start a comic series on Pirates of the Caribbean, its a great movie in my opinion.
Course, that's if you like it, no use bothering with it if you have no interest even after watching the first movie.

If you do decide to watch the Star Wars movies, I suggest the machete cut.
Unless you want to watch them in numerical order (takes away from some of the best twists in the originals), or in production order (IMHO, ends it on a dull moment rather than an epic crescendo).
Of course, the machete cut has its faults as well (The cut is: 4, 5, 2, 3, 6; leaving the first out completely [it's basically that unneeded]), but really I only suggest it because it's the way I personally found the maximum enjoyment from rewatching the films.

star wars is a great franchise just for the lore and settings the prequels aren't that great as for the other films on your list I recommend going to watch them
